If I could live off Banana Bread

Banana Bread is a serious weakness for me.
I don't even LOVE banana's that much, but the combination of buttermilk, sugar and banana's just makes for the perfect bread. I like mine pure (no nuts or garbage) and simple! This is by far the best recipe I have ever come across :)

Enjoy!

Oh could you not read that? haha JK!
 The recipe is:
1/2 Cup Butter
3/4 Cup Sugar (white)
1 Egg
2 Cups Flour
1/2 tsp. Baking Soda
1 1/2 tsp. Baking Powder
1/2 tsp. Salt
1 Cup Mashed Banana (the riper the better! Don't throw those brown banana's away!)
3 TBSP. Buttermilk (I usually add just a tad more for more moistness)

The fastest way to do this recipe (and trust me, I've whipped this out like crazy sometimes!) is to blend your butter and sugar together in an electric mixer till smooth, light and fluffy. While that's going on, Mix together your dry stuff  in a bowl (flour, soda, powder and salt). In a smaller bowl mash your banana (FYI the 1 Cup of banana usually evens out to one and a half banana's) with the buttermilk and mix it well.
Now back to your butter and sugar. Scrap the sides and mix in the egg well.
THIS PART IS IMPORTANT!
Beginning with the flour mixture, alternate adding in the dry mixture with the wet into your egg/butter/sugar. I just put the mixture on low and alternate these in thirds. (Dry mixture, wet, dry, wet, dry, wet).
Spray a loaf pan---or if you're in a hurry a muffin tin and bake in a 350 oven. Loaf for 1 hour, muffins until they are slightly brown and toothpick comes out clean.
(Should I be concerned that I just wrote this entire post from memory?! oh well)

Make sure to always scoop your flour into the cups, don't pat!

MMmmmmmm

The result of baking.....blah!
